Avocado Toast (GF)

I love having avocado toast on gluten-free bread with tomato slices and "pickled" red onion (not pictured) with eggs on the side!

Serves 1


Ingredients:

2 slices of bread of choice

1/2 avocado, mashed

Lemon juice, to taste

Red chili flakes

S&P


Optional toppings:

"Pickled" red onions (recipe below)

Cooked egg

Tomato slices

Sauerkraut

Sprouts


“Pickled” red onions:

Red onion, thinly sliced

Lemon juice

Salt


Directions:

  1. While the bread is toasting, slice the red onion and add it in a small bowl with lemon juice and salt. Use your hands to mix well and allow it to marinate while prepping the rest of the ingredients.

  2. Assemble and enjoy!
