Chocolate Crunch Dessert Granola

Cook time: 20-25 minutes
Yields: About 6 cups
Ingredients:
2 & 1/4 cup regular rolled oats
1/2 cup peanuts (I used walnuts)
1/2-3/4 tsp kosher salt, to taste (I used 3/4 tsp)
2 tbsp peanut butter (or almond butter)
1 tsp pure vanilla extract
1/3 cup + 2 tbsp of brown rice syrup (I used half honey and half maple syrup)
3 tbsp coconut oil
1 & 1/4 cup dark chocolate chips (I used 1 cup of 72% dark chocolate chunks and 1/4 cup of semi-sweet chocolate chips.)
Directions:
1. Preheat oven to 325F and line a baking sheet with parchment paper.
2. In a large bowl, mix together the dry ingredients (oats, salt, walnuts). In a small pot, on low heat, stir together the coconut oil, liquid sweetener, and almond butter. Turn the heat off and stir in vanilla extract.
3. Add wet ingredients to dry ingredients, stir very well until oats are coated, and then add in the chocolate chips.
4. Spread on baking sheet and bake at 325F for 20-25 minutes, flipping once half way through. Cool on baking sheet for about 30 minutes before transferring into a container. Enjoy!
