Mediterranean Pasta Salad (Vegan)

A flavorful & delicious side salad!
Prep time: 10-15 minutes
Cook time: 10 minutes
Yields: 4-6 side servings
Mediterranean Pasta Salad:
200 g brown rice pasta (or pasta of choice)
¼ cup marinated artichokes*, chopped
¼ cup sun-dried tomatoes, chopped
¼ cup Kalamata olives, chopped (I used black olives)
1½ tbsp capers
2 tbsp fresh parsley
2 tbsp green onion, sliced
½ cup arugula
a handful of fresh basil
2 tbsp pine nuts (you can use raw sunflower seeds or walnuts)
1½ tbsp olive oil
1 tbsp lemon juice
1 garlic clove
1 tbsp nutritional yeast (optional-highly recommended!)
salt and pepper
1. Cook pasta according to the directions on the package. Rinse under cold water and dab with a paper towel to remove excess liquids. Chill for 10-15 minutes.
2. Meanwhile, make the dressing by combining the ingredients in a food processor or a blender and blending for 1-2 minutes.
3. In a large bowl, combine pasta with the rest of the ingredients. Add the dressing and toss to combine.
4. Store in the fridge in an airtight container for up to 3 days.
*You can buy marinated artichoke hearts or you can do it yourself.
