Oatmeal with Berry "Compote"

Yields: 1 serving
Oatmeal Ingredients:
1/2 cup of rolled oats
1/2 cup of water
1/2 cup of milk or water, plus more to taste*
1 ripe banana (fresh or frozen)
A couple of dashes of cinnamon
Pinch of salt
Mixed Berry "compote" Ingredients:
3/4 cup of frozen mixed berries
Coconut sugar or maple syrup (optional)
Toppings:
Berry "compote"
Fresh berries
Nut butter or chopped walnuts/pecans
A drizzle of maple syrup (optional)
Directions:
1. Add all oatmeal ingredients to a pot and cook on high heat until it boils, then reduce to medium heat and cook for 6-8 minutes, stirring often.
2. In a small saucepan add the frozen mixed berries and cook on medium-high heat for a few minutes. To make it a proper compote, add a little bit of sweetener to taste.
3. Once everything is cooked, place in a bowl and top it with the compote and toppings of your choice, and enjoy!
*Typically, when cooking oatmeal it is a 2:1 ratio between the liquid and oats, but because I tend to cook bananas with the oats I need to add more liquid (about 1/4 cup) for the oats to cook completely.
