Quinoa Porridge

Inspired by quinoa porridge recipes from Two Spoons and Bondi Harvest!

Prep time: 5 minutes

Cook time: 15-20 minutes

Yields: 2 servings


Ingredients:

1/2 cup uncooked quinoa

1 1/2 cup of non-dairy milk (homemade almond milk or 1 cup water & 1/2 cup canned coconut milk)

1 cinnamon stick (or a pinch of cinnamon)

3 cardamon pods, crushed (optional)


Toppings:

Fruit (berries, chopped apple, orange slices work well)

Chopped pecans & walnuts

Drizzle of honey or maple syrup

Coconut flakes


Directions:

1. In a medium-size saucepan on high heat add quinoa, milk, cinnamon stick, and cardamon pods and bring to a boil.

2. Then, reduce the heat to a simmer and stir often until most of the liquid is absorbed, takes about 15-20 minutes.

3. Remove cinnamon stick and cardamon pods.

4. Serve with toppings of choice. Enjoy!
