Simple Quinoa Salad

Here's a simple & delicious side salad you can prep for a few days to go with your meals!
Prep time: 30 minutes
Cook time: 15 minutes
1 cup dry quinoa
2 Persian cucumber, finely chopped
2 roma tomatoes, finely chopped
1 red bell pepper
1/4 red onion, finely chopped
lots of green olives, chopped
handful of parsley, chopped
1 handful of spinach, finely chopped
1 1/2 limes, juiced
drizzle of olive oil
red chili flakes (optional)
salt & pepper, to taste
1. Cook the quinoa according to the packaging instructions.
2. Meanwhile, chop all the veggies and add to a large bowl.
3. Remove the quinoa from the stove and allow it to cool for a few minutes. Meanwhile, add all the dressing ingredients to the veggies and mix well.
4. Add the quinoa, mix well, and season to taste, if needed. Enjoy!
